Rasim Vimadur 2016

Rasim Vimadur 2016

Naturally sweet red wine made by overripening and passerillage or "raisining" on the vine. Rasim was the word for grapes in 14th cent. Perpignan. The term is the origin of another two words for grapes: the Catalan raïm and the French raisin. It is also the name we gave our project seeking to produce two sweet wines from Vallbona de les Monges, in close cooperation with designer Claret Serrahima.

Grape varieties and origin

Garnatxa Negra and, depending on the vintage, Touriga Nacional from the boscos parcel in the Nalec area.

This is a naturally sweet red wine manufactured by overripening and carrying out passerillage or "raisining" on the vine.

Tasting profile and food pairings

Intense ripe cherry colour. Smells of berries and sweet crystallized plums with violet and spicy notes, including cinnamon and nutmeg. In mouth, it is sweet yet fresh and mostly pleasant, with very fine ripe and slightly astringent tannins. Pairs well with black chocolate desserts and blue cheese.
