L'Olivera Reserva Superior is a sparkling wine that rest in the cellar for at least 36 months. Our sparkling wines follow traditional winemaking methods: the second fermentation takes place inside the bottle, disgorging is manual at room temperature, and we don’t add any sugar to the bottle’s content. All bottles clearly indicate disgorging dates on label.

Grape varieties and origin

Macabeo, Parellada and Chardonnay from Vallbona de les Monges.



We start by fermenting base wine at controlled temperature in stainless steel tanks. Then comes the coupage or blending process, working from the Macabeo, Parellada and Chardonnay varieties that will age for 3 months in barrels. The following phase is known as tiraje and it culminates with the wine being bottled and left in the cellar for at least 36 months. Disgorging is done by hand at room temperature and progressively, in small lots, without adding any sugar to the bottle's content.


Tasting profile and food pairings

Golden yellow colour and very fine bubbles. Deep and highly suggestive on the nose, with toasted aromas combined with butter, aniseeds, very ripe banana and baked fruit. In mouth, it has a direct fresh sweeping taste, with aging retro-olfaction notes and a long consistent after taste.

Pairs well with complex dishes and desserts with an acidic yet creamy touch, like for instance tatin pie, apple crumble or nuts.
