L'Olivera Reserva Brut Nature

L'Olivera Reserva is a sparkling wine that rests in the cellar for at least 16 months. Our sparkling wines follow traditional winemaking methods: the second fermentation takes place inside the bottle, disgorging is manual at room temperature, and we don’t add any sugar to the bottle’s content. All bottles clearly indicate disgorging dates on label.

Grape varieties and origin

Macabeo and Parellada from Vallbona de les Monges.

 

Winemaking

Base wine is fermented at controlled temperature in stainless steel tanks and then there is a subsequent coupage or blending of the Macabeo and Parellada varieties. The following phase, known as tiraje culminates with the wine being bottled and left in the cellar for at least 16 months. Disgorging is done progressively in small lots, without adding additional sugar to the bottle's content.

 

Tasting profile and food pairings

Golden yellow colour and very fine bubbles. A nose reminiscent of forest flowers, acacia, watermelon, pear and citric notes with well-balanced acidity. On the palate, it is a powerful, richly flavoured and ever so slightly bitter wine.

Good pairing with any kind of savoury dish, either fresh, rice-based, hors d'oeuvres or millefeuille salads. Ideal for informal functions at any time of day.
